I am obsessed with spinach and eat it on the daily. So it's no surprise that I load tons of it on my sandwich. Instead of mayo, I use hummus spread by sabra, tomatoes, onions, a little Parmesan, and a whole egg on toasted whole wheat bread that's only 45 calories per slice. It's a very filling lunch with everything in it, it keeps me fueled throughout the rest of the day:)
